Recipe I Liked.....

I figured I better get to writing more posts to cover up that last one!!:-) Hubby really is a marvelous guy by the way!! So easy going.....he was sitting with us while we did the "needs" meme....he laughed too!! Just wanted everyone to know that...especially if you don't know him!!

With this post I wanted to talk a little about pizza and share a recipe!! Pizza has been so hard to count the carbs on.....not to mention the delayed absorption factor in the added fat. We like to make our own crust here, which makes it even harder to figure out carbs. It's usually a guessing game. Not a huge deal.....we manage...but if there is something to make the process easier I'm all for it.

A friend shared a pizza burger recipe a long time ago with us, so I tried it last night. The recipe calls for hamburger buns, but I used English muffins because they were cheaper. By using something pre-packaged made the carb counting a lot easier. Plus I can look for multi-grain or whole wheat products.

What I also like about this recipe is the meat mixture can be made up ahead of time, so you can make it and stick it in the fridge. We were gone all afternoon, so when we got here I just needed to assemble the pizza burgers. Not a big mess and a lot of food!! We even had a lot of leftover meat mixture that I plan to freeze for another night.

So here is the recipe.....it tasted a lot like real pizza but it was much easier to count the carbs!!

Pizza Burgers

Brown and drain:
1 lb pork sausage
1 lb hamburger or ground turkey
(You can add onion while browning if you like. I added some dried minced garlic.)

Add 1-2 jars of pizza sauce to the meats. (We are really on a food budget crunch with prices going so much higher, so I only used one 14 oz. jar. It was more than moist enough.)

You can add oregano, parsley, salt and pepper to taste. ( I didn't add anything.)

At this point you can put the mixture in the fridge....or freeze for a later date if you'd like.

Assembly:
Put meat mixture on an open hamburger bun....(I covered most of the bun. For a reference I used a pkg of 12 English muffins.....so I made 24 for our family of 7, and we had 3 leftover, plus we only used maybe 2/3 of the meat mixture.)

Add any other toppings your family likes....we like pepperoni....but you can add veggies or whatever pizza toppings you like.

Top with mozzarella cheese.

Put in oven at 350 and bake until cheese is melted....about 8-10 minutes. (We noticed coming from the fridge it took a little bit longer for the meat mixture to warm up, but just keep an eye on them.)

This batch makes a ton.....so if there are just a couple of you, I would freeze the rest. The recipe is easy to double and triple!! Great for a crowd.....especially teenagers!!:-)

This sounds so good. Our son always comes over to our house on Sunday for lunch. He lives by himself & lives mostly on bologna sandwiches. So I try to have a good, home-cooked meal for him on Sunday. This one is perfect. I'm going to try it this Sunday. Thanks for sharing it.

I'm sure you already know about this, Lynnea, but just in case-- calorie counter. com is a site that will analyze recipes. So I think you can put in a recipe and it will count the carbs per serving.

I think we've talked about it before, but wondered if I was right.

Cousin from Florida (one of the 36) found me on Facebook and told me her granddaughter (Shelby) has type 1.

June T has a similar recipe and she puts them on half a hamburger bun and only uses hamburger and then puts them under the broiler.

Jan....yes we use caloriecount.about.com for some recipes, but the problem with my pizza dough recipe and my bread recipe is that my batches are so big using my Bosch. So it makes it hard to determine serving sizes. But we have used it for other items.

Huskermarty...yes, I forgot to mention that Jason broils them for the last minute or two. He likes the cheese to turn brown!!
